PB & J Cookies

Two favorites come together at last - PB & J and cookies. This delicious inspiration from a lunchtime favorite will leave you feeling like a kid again.

Ingredients:

  • 2 1/2 cups All-Purpose Flour
  • 1 tsp. Baking Powder
  • 1 1/2 tsp. Baking Soda
  • 2 cups packed light Brown Sugar
  • 1 cup Minerva Dairy Amish Roll Butter, softened
  • 1 cup Peanut Butter
  • 1 tsp. Vanilla Extract
  • 2 large Eggs
  • 2 Tbsp. of your favorite Jam or Jelly

Directions:

Preheat oven to 375F. Combine flour, baking powder, and baking soda. In a large bowl, beat together the butter, brown sugar, peanut butter, eggs, and vanilla extract. Gradually blend in the dry ingredients- the dough will be very soft. Using a small ice cream scoop, drop the dough on a parchment lined cookie sheet 3 inches apart. Using the back of a large spoon dipped in flour, spread the cookies into large rounds. Bake 8-10 minutes and take a small glass dipped in flour and make an impression in the center of each cookie. Continue to bake 2-4 minutes until golden brown. As the cookies are cooling on a wire rack, spoon the jam or jelly into the impressions in the center of each cookie.

Slow Cooker Country Boil

Say “hello” to summer flavor at any time of the year! All you need is a picnic blanket and plenty of napkins.

Ingredients:

  • 1 lb. raw, peeled & deveined shrimp
  • 1 lb. little neck clams
  • 1 lb. mussels
  • 1 lb. Andouille Sausage, sliced
  • 1 lb. baby white potatoes, halved
  • 3 ears of sweet corn, cut into thirds
  • 8 oz. Minerva Dairy Garlic and Herb Butter
  • 1 lemon, halved (plus more for garnish)
  • 14 oz. chicken stock
  • 1/2 cup white wine
  • 1 white onion, cut into eighths
  • 2 stalks of celery, diced thick
  • 2 Tbsp. cajun seasoning of your choice
  • 1 Tbsp. onion powder
  • 1 Tbsp. sea salt
  • 1 Tbsp. black pepper
  • 2 cups water

Directions:

In a large slow cooker, set on high heat. Add onions, celery, sausage, Garlic and Herb Butter, potatoes, corn, lemon, cajun seasoning, chicken stock, white wine, and all other seasonings - stir to combine.

Cook for approximately 3 hours, stirring occasionally. After potatoes become tender when poked with a fork, add the seafood, and two cups of water (enough to cover seafood). Cook for 30 minutes.

This is traditionally served outside on a table covered in newspaper. For winter, consider serving on a large cutting board garnished with lemons and your favorite hot sauce.

Prosciutto & Fig Panini

Make lunchtime luxurious with our Procuitto & Fig Panini!

Ingredients:

  • 4 Tbsp. Minerva Dairy Smoked Butter, melted
  • 1/2 lb. Minerva Dairy Smoked Gouda Cheese, sliced
  • 1/2 lb. Prosciutto, sliced thin
  • 3 fresh Figs, sliced
  • 1 Baguette sliced length-wise and into 4 sections

Directions:

Warm your panini press and brush the melted Minerva Dairy Smoked Butter on both sides of each slice of bread. Start assembling the sandwich by placing slice of cheese, slices of prosciutto, slices of fig and finally more cheese. Place other slice on top and place into panini press. Cook until golden brown and cheese is melted.

Garlic Herb Shrimp

Perfectly seasoned with a blend of Parmesan cheese, lemon zest, garlic powder and garlic and herb butter - the ultimate Holiday Party Appetizer.

Ingredients:

  • 1 lb. Gulf Shrimp, peeled & deveined
  • 1/2 cup Minerva Dairy Garlic and Herb Butter
  • 1/4 cup Parmesan Cheese, grated
  • 2 Tbsp. Corn Starch
  • 1 Tbsp. Lemon Zest
  • 1 tsp. Garlic Powder
  • 1/2 tsp. Black Pepper
  • 1/4 tsp. Sea Salt

Directions:

Peel and devein shrimp, rinse well. Combine Corn Starch and all dry ingredients and mix with the shrimp until evenly coated. Melt butter in a large skillet over medium heat. Place shrimp in a single layer and cook until pink on one side and turn. As the shrimp cook all the way through, add the Parmesan cheese and Lemon Zest and toss to coat. Garnish with Lemon Wedges.
