Lemon Snowballs

Craving a zesty cookie recipe? Look no further. Our Lemon Snowballs are a family favorite.


  • 1 cup (2 sticks) unsalted Minerva Dairy 84% Butterfat Butter, softened
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup confectioners' sugar, plus 2 more cups for rolling
  • 1 egg yolk
  • 1/4 cup freshly squeezed lemon juice
  • 1 heaping Tbsp. lemon zest
  • 1/2 tsp vanilla extract


In a bowl, add 84% butterfat butter, sugar and egg until well blended. Add lemon juice and lemon zest. Combine flour, baking powder, vanilla extract and salt; stir into creamed mixture. Cover and refrigerate the dough for at least 1 hour or overnight.

Roll into 1-in. balls coating with confectioners' sugar. Place on ungreased baking sheet. Bake at 350°F for 10-12 minutes or until bottoms are lightly browned (cookies will not brown on top).

Remove immediately to wire racks; cool for 5 minutes, then roll in confectioners' sugar. Makes about 2 dozen.
