Jerk Orange Roughy Flatbread

We’re adding a southern twang to your traditional flatbread sandwich. And it’s delicious, y’all!

Ingredients:

  • 2 orange Roughy filets
  • 4 Tbsp. Minerva Dairy Amish Roll Butter
  • 4 Tbsp. Olive Oil
  • 4 Tbsp. Caribbean Jerk seasoning
  • 4 Flatbreads
  • 1/2 lb. Minerva Dairy Smoked Gouda
  • 1/2 cup fresh Cilantro, leaves only
  • 1 Lime, juiced
  • 4 oz. Minerva Dairy Garlic and Herb Butter, melted
  • For Habanero Mayo:
  • 1/4 cup Mayo
  • 3 Habanero Peppers (Scotch Bonnet)
  • 1 Tbsp. minced Garlic
  • 1 Tbsp. Shallot, minced
  • 1/2 Tbsp. Lime Juice
  • 1/2 Tbsp. Orange Juice
  • Drizzle of Honey


Directions:

Combine all ingredients except mayo in small saucepan and cook until soft, cool in fridge. Combine cooled ingredients with mayo in small food processor and combine until smooth.

Flatbread Sandwich:
Rub filets with Jerk seasoning while butter and olive oil are warming in large frying pan. Add fish to pan and cook over medium heat until done on both side, drizzle with lime juice. Warm panini pan and melt Minerva Dairy Garlic & Herb Butter. Leave flatbreads in bag and microwave for 30 seconds to soften slightly (they fold without breaking). Brush both sides of flatbread with melted Minerva Dairy Garlic & Herb Butter. Assemble sandwich by breaking pieces of the filet to fit on one half of the flatbread. Drizzle with habanero mayo, add sliced Minerva Dairy Smoked Provolone & cilantro. Fold flatbread in half and place in panini pan. Cook until flatbread is golden brown and cheese is melted.
