Okra and Tomatoes

Keep it healthy with this light yet savory recipe!


  • 12 oz. fresh whole Okra
  • 2 cans stewed Tomatoes
  • 2 Vidalia Onions, large dice
  • 1/4 cup Minerva Dairy Amish Roll Butter
  • 1/4 cup chicken stock
  • 2 Tbsp. olive oil
  • Sea Salt and Black Pepper to taste


Melt butter and olive oil in large pot, add onions and cook until fragrant and soft. Add the Fresh Okra and stir in Chicken stock and sea salt and black pepper. Add Stewed tomatoes and a pinch more sea salt. Cook until okra are soft.
